Amish Baked Oatmeal

I got this recipe from Donna over at The Vegetarian Group. Its a great resource for vegetarian and vegan recipes just be warned its high volume. I stick with the digest format to make it manageable.

The original recipe calls for eggs and butter so I tinkered a bit and here's what I came up with:

Katie's version of Amish Baked Oatmeal
The night before I combined the following in a greased 9" x 12" pan:
1 1/2 Cup quick-cooking oats
1/4 Cup vanilla sugar
1/2 Cup milk or soy milk
1/4 cup ground flaxseed meal
1 tsp baking powder
1 cup of raisins

In the morning, since I was unable to get out of bed, I had graduated from the bathroom floor by that point, Leenie added:

1 1/2 cups of plain soymilk

Bake at 350 degrees for 25 - 30 minutes or until edges are golden
brown. Immediately cut and spoon out into bowls; add
milk. Top with fruit and/or brown sugar if desired.

Serves about 6

    can i make a request...when you have time...can you post some snackish ideas.....my kids are grazers...they like to snack and i like it to be healthy....i'd appreciate any input if you could...no rush...

    your oatmeal sounds yummy! i'm part of that email group and boy are you right - talk about high volume!!
    so gald that your kids can you help you when you're feeling under the weather. i hope you all start feeling tip-top real soon!
    can you give me the link to that site where you can look for a nutritionist? i can't seem to find it! i have had ulcerative colitis for 7 years and am feeling like i really need to see someone that can help me make sure i get all the minearls i need.

    No problem, its the American Dietetic Association website www.eatright.org
    Click on find a nutrition professional and then you can do a search by zip code. They will all list areas of specialty and vegetarian nutrition is definitely one of them. Good Luck!

    We are huge fans of real oatmeal. My husband thought instant was okay and didn't realize old-fashioned oatmeal is 10 times tastier. We like to saute apples with some brown sugar and pecans to put on ours.
