A Super Simple Strawberry Jam Recipe from VegWeb

There was an abundance of juicy strawberries at our CSA yesterday. We've eaten scads of them. Some were sliced and put into almond butter sandwiches in place of jelly (thanks to Jennifer at The Vegan Lunchbox for giving me this idea.) The rest are being made into 8 Minute Awesome Strawberry Jam. This is my favorite quickie jam recipe. I usually use less sugar adding only the barest minimum.

This looks great! I love how simple it is. I'm going to give it a whirl with strawberries, and maybe next month cherries!

that's so funny, that's the recipe my mom has been using for years.....well she does the one cup to one cup ratio.....but always cut it down on the sugar....she never did this cause she was a veg...she did this cause sugar was cheaper than pectin at the time.....works wonders.....and no fail....she never understood the complexity of today's jam's....

I've tried it with blueberries and it works well, so why not with cherries!

I agree with your mom, if there's a simple cheap way to do it then why not stick with it?
